What is the ClearAlc Process?
Think of ClearAlc as the ultimate tool for gentle, flexible high-quality dealcoholization. It’s built around a single-pass low temperature vacuum distillation system, designed and manufactured by our partners at Tomsa Destil in Spain, who’ve been refining alcohol technology for over 170 years. That’s some serious pedigree.
Here’s the magic: ClearAlc can take wine, cider, or spirits and remove alcohol (as low as 0.02% ABV) without stripping away what makes them great. It separates the liquid into multiple streams (Dealc Beverage, Alcohol, and several different Concentrated Aroma Essences) allowing us to isolate and preserve the delicate aromas and flavors and utilize as desired. The system is also capable of alcohol rectification up to 92% abv. This flexibility allows producers to create a range of products, from spirits to low-and-no-alcohol beverages all while maintaining high quality and natural flavors.

The ClearAlc Process: A Closer Look
At a glance, the ClearAlc process, shown on this flow diagram, is a technical roadmap, lets dig a little deeper into the process:
1. Storage Tank (Wine In)
Wine is stored in a temperature-controlled storage tank prior to dealcoholization. No pre-filtration is required, reducing production bottlenecks and preserving character.
2. Preheating
The wine is then passed through a high-efficiency heat exchanger, where it gains heat from the outgoing distillate, a move that saves energy and maintains thermal balance.
3. Evaporation
Here’s where the real work happens. Under high vacuum and low temperatures, volatile compounds (including ethanol and aromas) are evaporated. The clever part? This system uses thin-film evaporation, minimizing residence time to protect delicate aromas.
4. Aroma (Essence) Recovery
Aromas are selectively recovered from the vapor stream and condensed separately. These can then be reintroduced to the dealcoholized wine as desired, a key reason BevZero’s products retain full flavor.
5. Alcohol Removal
After the first stream of volatile aromas are removed, the liquid is dealcoholized and separated into 3 fractions:
- Completed dealcoholized product at <45° C
- Alcohol Rich Vapors at 45% abv
- Additional aroma stream: Rich in heavy aromas and flavors and are retained for later use.
6. Rectification Column
The alcohol rich vapors at 45% abv go to the rectification column where they are distilled and separated into additional aroma streams as well as a high quality alcohol Spirits at 92% ABV, allowing for reuse or resale. No waste here, only closed-loop sustainability.
7. Cooling and Final Blending
The now alcohol-free base wine is cooled and blended with its recovered aromas. The result? A finished product that’s clean, complex, and ready for packaging or further development.
